Whenever I think of s'mores I always think of my all time favorite movie growing up, "The Sandlot." I still own, watch and quote my VHS to this day.
So when our design editor, Mallorie, told me she was baking S'mores cupcakes for her own birthday, I could help but think, "You're killing me, Smalls!"
I told her she wasn’t allowed to make her own birthday cupcakes, because on birthdays people are supposed to bring you baked goods, not the other way around.
But she insisted.
And I’m happy she did. Her S’mores cupcakes didn't last very long in the office.
Chocolate Cupcakes
What you need:
• One box of store-bought chocolate cake mix
OR
• Your favorite chocolate cake recipe
What to do:
• If using store-bought, prepare the cupcakes as directed OR follow your favorite recipe. Allow the cupcakes to cool before frosting
Marshmallow Frosting
What you need:
• 2 sticks butter, room temperature
• 2 cups confectioner’s sugar
• 1/2 tsp. vanilla
• 16 oz. tub of marshmallow cream
What to do:
Cream the butter with a hand-held mixer on high until it’s light and fluffy. Add the sugar, 1/4 cup at a time, and beat until fluffy each time. Add the vanilla. Dump in the marshmallow cream and mix until creamy. Transfer to pastry bag and pipe in a spiral motion onto cupcakes. Or a simple trick is to cut the corner off a Ziploc bag and use that instead.
Dust the tops with graham cracker crumbs, and top each cupcake off with a square of Hershey’s chocolate.
