Each year, I try to come up with something new to send my out-of-state friends for Christmas. And each year, something happens to my well-laid plans, and I don’t get the boxes of goodies shipped until it’s almost too late.
This year, I opted to make Oreo truffles. With only a few ingredients and a couple steps, making truffles is a super-simple way to spread the deliciousness around during the holidays. I even saw on Facebook this week that a friend was making these with her kids. Instead of using a food processor, they put the Oreos in a large Ziploc and used a rolling pin to crush them.
Although I still haven’t made it to the post office yet, the truffles are finished and the boxes are packed, and I'm sure my friends will be excited when their boxes of yumminess arrives.
Oreo truffles
What you need:
1 package Oreos (I used the red frosting ones)
1 (8 ounce) package cream cheese, softened
1 (14 ounce) bag dark cocoa candy melts
1/2 cup red or green candy melts
What to do:
Line a large cookie sheet with wax paper. In food processor (I use a manual one), crush the cookies using quick on-and-off motions, until achieving the consistency of fine crumbs.
In a large bowl or mixer, mix cookie crumbs with the cream cheese until well blended. Roll into 1-inch balls. Place on cookie sheet. Freeze 30 minutes or until firm.
In a small microwavable bowl or a double boiler, microwave the dark cocoa candy melts according to package directions. Stir until smooth.
Remove a few truffles from the freezer at a time. Dip each truffle in the melted chocolate to cover; shake off excess. Place on wax paper until chocolate is set.
Melt 1/2 cup red or green candy melts and transfer to a disposable decorating bag (I just use a Ziploc). Snip off the tip of the bag and drizzle the melted candy coating onto the truffles. After the coating is set, store the truffles in the refrigerator or freezer in an airtight container.
