Super food: Buffalo chicken dip

Super Bowl Sunday means different things for everyone. For the sports enthusiast, it’s all about the game. If your team is playing, it’s also about bragging rights. For others, the commercials and halftime show are the highlights. And then, of course, there’s the party.

A Super Bowl party is not complete without food and drink, and that’s where I come in.

There are a few foods that I believe every football party should have: Beer (I am calling this a food for purposes of the column), a variety of dips and chicken wings.

But when you combine two of those essentials, you get one addicting appetizer.

Buffalo chicken dip is a very popular appetizer right now, so I decided to jump on board and see what it’s all about. With just five ingredients, it is a quick, simple and tasty addition to any party.

I made this dish for a playoff party not knowing the extent if its goodness. Within 20 minutes of setting it out, it was devoured. Basically licked clean.

They had no idea that I substituted the ingredients for low fat versions. The cream cheese was actually neufchatel cheese and the dressing I used was yogurt-based. If you are in a hurry, you can also substitute the shredded chicken with two cans of white chunk chicken, but the fresh stuff is much better.

I have a feeling I’ll make this again next week. But a double batch this time.
 

Buffalo chicken dip
What you need:
8 oz. package cream cheese, softened
1/2 cup ranch or blue cheese dressing
1/2 cup Buffalo Wing Sauce
1/2 cup shredded mozzarella cheese or crumbled blue cheese
2 cups shredded cooked chicken

What to do:
Heat oven to 350°. Place cream cheese into deep baking dish, stir until smooth.

Mix in salad dressing, wing sauce and cheese. Stir in chicken.

Bake 20 min. or until mixture is heated through; stir. Garnish as desired. Serve with chips or vegetables
To cook in the microwave, prepare as above. Place in microwave-safe dish. Microwave, uncovered, on high for five min. until hot, stirring halfway through cooking.

In the slow cooker, combine ingredients as directed above. Place mixture into small slow cooker. Cover pot. Heat on high setting for 1.5 hours until hot and bubbly or on low setting for 2.5 to 3 hours. Stir.

While tailgating, prepare dip ahead and place in heavy disposable foil pan. Place pan on grill and heat dip until hot and bubbly.
