For me, lasagna is one of those comfort foods that I don’t get to eat very often. I usually only make it if I am having people over because of the massive amount of leftovers. Even between two people, I end up eating it for at least one meal a day all week. I thought I found the solution to that problem while trolling the Pinterest boards: lasagna roll-ups. Perfect.
The roll-up is a lasagna noodle covered in all the cheesy goodness and rolled up to resemble a single serving of lasagna. I saw several variations of this, mostly just pictures and no instructions, so I thought I’d give it a shot and just make it up along the way.
Seeing that caprese salad is one of my go-tos, I thought tomato and basil were the perfect fillers to test this out with. The process was rather simple: mix up the cheeses, top it with tomato and fresh basil, roll it up and bake. The end product was delicious little lasagna rolls.
The only problem was that while making these rolls, I forgot my goal of not having a ton of leftovers. I made six lasagna rolls, which for me means six meals. Looking back, I would have cut the following recipe in half or in thirds.
Caprese lasagna roll-ups
What you need:
6 lasagna noodles, uncooked
8 ounces (1 bag) shredded mozzarella cheese (I use part skim)
3/4 cup ricotta cheese
1 large egg white
Ground black pepper
2-3 medium roma tomatoes, thinly sliced
A few bunches chopped fresh basil
1-2 cups marinara sauce
What to do:
Preheat oven to 350 degrees. Cook pasta according to package. Drain, do not rise. Align noodles on a single layer of parchment or wax paper.
For filling, in a medium mixing bowl, whisk together ricotta cheese and egg white until well blended. Mix in mozzarella cheese and season with black pepper to taste.
Spread an even layer of cheese mixture over lasagna noodle covering end to end. Place tomato slices over cheese and sprinkle with basil. Tightly roll lasagna noodle to opposite end.
Spread a thin layer, about 1/4 cup of sauce in the bottom of an 11-by-7 inch baking dish. Align roll-ups seam-side-down in dish. Top each roll-up with pasta sauce, covering all edges so they don’t dry up while baking.
If desired, sprinkle top with more cheese and bake in preheated oven for 30 minutes. Garnish with more fresh basil for the ultimate bite.
