Capt. Scott Cornelius of the Tomoka Outpost inside Tomoka State Park will be seen by a worldwide audience showing how to make his deep-fried red fish bites in an upcoming episode of "Bizarre Foods with Andrew Zimmern."
“It’s exciting for a small town guy like me to be part of a show like that," Cornelius said.
The episode explores how the early settlers during Ponce de Leon's lifetime caught and prepared their food, comparing it to what people do today. Cornelius, who was born and raised in Ormond Beach, went out fishing with Zimmern and his camera crew for a few hours in Tomoka State Park, where they were on the lookout for red fish.
Cornelius said that similar to how the early settlers considered food, whenever he is able to catch red fish it feels like a prize. Cutting the fish into small bite-sized squares allows him to share that prize with his family.
The portion featuring Tomoka State Park and Cornelius will be about four minutes of the one-hour show. The episode will air at 9 p.m. on Tuesday, Sept. 5, on the Travel Channel.
