63 Sovereign, the restaurant at 63 W. Granada Blvd., is in a house built in 1924, but the décor gives it a modern flare. This combination reflects the menu, where the three young owners take traditional dishes and add their own twist.
The entrepreneurs, all under age 30, Brandon Sheppard, Ryan Truong and Robyn Capece, started the business a year ago on July 4, combining a diverse experience in the restaurant industry, including Asian and Italian. Sheppard said they want customers to enjoy culinary opportunities from around the world and unique meals they can’t find other places. They also have a raw bar and a large selection of wines and beer with indoor and outdoor dining options.
The menu has evolved over the year. It changes every four months to have seasonal offerings. Sheppard said you can get a vegetable when it’s not in season but it doesn’t taste the same.
“Our goal is to be as fresh and seasonal as possible,” he said.
Another change over the year has been to have Test Kitchen Tuesday, where they offer a limited number of new items and get feedback from guests. It’s been so popular that Sheppard says they recommend reservations for Tuesday.
They’ve also added private parties, such as bridal showers, birthday dinners and corporate meetings.
The name, 63 Sovereign, came from the fact that they own the business themselves, without a financial backer they have to answer to.
“We enjoy being able to make our own decisions,” Truong said. “I’ve learned problem solving and how to manage time. It’s been a great experience.”
The three also work fulltime in careers separate from the restaurant.
People say millennials leave Ormond Beach, but these restaurant owners are showing it’s possible to build a career here.
“This is where we want to be,” Sheppard said.
