Crumbl Cookie at One Daytona, located between Painting with a Twist and Crab Knight, held its grand opening on Saturday, Oct. 7.
This is franchise owners Mark and Erin Schefer's third store opening. The couple opened their first Crumbl Cookies location in June 2020 in Lake Mary and their second store opened in June 2022 in DeLand.
Their journey with Crumbl Cookies started in Utah, where the company was founded. While visiting family and friends, Jason McGowan, co-founder and CEO of Crumbl Cookies, had the Schefers taste cookie samples for his upcoming lineup. The Schefers said they fell in love with the cookies and the business, but had to wait until Crumbl Cookies was able to expand to Florida.
Eight months later, they got the call and became Crumbl Cookie’s first franchise partner in Florida.
“We are partners with my brothers and so every time we open a new location, the goal is to build stronger and better bonds with my family and to extend that same goal out to the communities we serve,” Mark Schefer said.
The store at One Daytona was delayed due to permitting and plans, causing the grand opening date to be held later than expected. Hiring was a challenge, as Crumbl Cookies stores normally hire 70 employees. The Schefers had the candidate pool to hire 70, but instead chose to hire and train 40 employees to be able to take on any role in the store at any time.
“We hired a bunch of college students majoring in various things," Mark Schefer said. "We want our employees to walk away from this experience learning something more than just about cookies. We want them to feel a sense of community here, a sense of gathering and a sense of family the same way it has impacted me and my brothers.”
Crumbl Cookie offers five specialty flavors every week from their 275-cookie roster and rotates between its chocolate chip cookie and the semi-sweet chocolate chunk cookie.
“My number one rule across the board is ‘people are always first,’" Erin Schefer said. "That includes my employees and the community because at the end of the day, these are just cookies, and the people are what really matter."
