Redefined Food Co. could be the first business to work at the Palm Coast's new Southern Recreation Center concession area.

The Parks and Recreation department presented City Council with a resolution to award the contract to the local restaurant at the Jan. 9 City Council workshop meeting.

The contract is a five-year term, with the option for a one-time, one-year extension. Rent will be $837 per month with an annual 3% increase. The tenant will be responsible for all of its utilities and the concession will be open a minimum for four hours a day.

City Council members were initially confused about why the renewal period would only be for one year, and asked staff to revisit the lease period with Redefined Food Co.

Redefined Food Co. has a storefront at the City Market Plaza at 160 Cypress Point Parkway, in unit A106 on the first floor. The restaurant serves a range of healthy foods, and the proposed menu for the concession area will feature "unique and healthy" food options, including gourmet sandwiches, petite platters, salads smoothies and even some European and American deserts and pastries.
